Executive Chef and co-owner Cullen Campbell offers up fresh seafood with the reminiscent feel of remote Italian seaside villages. By Day, Crudo Offers Breakfast and Lunch Favorites
Breakfast at Crudo Cafe consists of French toast, omelets, frittatas, and breakfast burritos while their daytime menu includes favorites like panini sandwiches, soups and salads comprised of ingredients straight from the garden. Because of their fresh approach, Crudo's menu is inspired by the changing seasons and the weekly produce of Maya's Farm. Pastry chef Tracy Dempsey bakes up fresh pastries filling the salon and it's boutique with intriguing scents and homestyle goodness while Simply Bread is Curdo's choice purveyor of delicious bread.
By Night, Crudo Goes Raw
Chef Campbell knew the Valley was craving something new in culinary fare yet wanted to embrace his strong belief in utilizing fresh ingredients. With a little nudge from Master Sommelier, Bobby Stuckey of Denver's Frasca Food and Wine, the idea for Crudo was born. A sampling of Crudo's dinner bites include Butterfish with oranges, olives and basil and Kampachi with bottarga and oven-dried tomato. How about prosciutto with pickles and peppers? For those not yet ready to go raw, a yellowtail stew or risotto with cockscomb with abalone mushrooms is sure to please. Some Italian soul food like polenta with extravagant foie gras or homemade gnocchi with prosciutto will set your senses reeling, while classic rolled veal in sguazeto is sure to please.
Crudo's Wine List
Chef Campbell's presence extends beyond the kitchen as sommelier as well. His thoughtfully crafted wine list is a superb sampling of the grape that not only highlights the culinary marvel of northern Italy, but includes some American favorites as well. Traditional Italian vinos compliment the adventurous menu along with a few chosen whites from Washington and Santa Barbara.
Desserts at Crudo
Chef Tracy Dempsey, of Cowboy Ciao, wows patrons with delectable treats like Cocoa Nib Streusel-topped brownies with orange espresso ice cream and marshmallows. Chef Dempsey's Apple Tart with bacon offers a touch of down home goodness with its delicious kiss of carmel ice cream on top. Even the simplest treats, like Nutella stuffed cookies, will bring guests coming back for more.
The Team at Crudo Cafe
Chef Cullen Campbell leads an amazing team at Crudo Cafe which includes fellow chef and Operating Partner Brandon Crouser. In addition, local favorites Tracy Dempsey and Lisa Giungo round out the dedicated group with Dempsey focusing on sweets and pastries and Lisa G, as she's known around town, taking care of the bar and offers a hand in the kitchen. The four bring experience, as well as spirit and fun to this exciting endeavor.
Day or Night, Crudo Cafe Offers It All
Crudo serves breakfast and lunch all day Monday from 9 a.m. to 4 p.m and Tuesday through Thursday from 8 a.m. to 8 p.m. Lunch prices range from $8-$10. Dinners are offered Thursday through Saturday from 6:00 to 10:00 p.m with prices averaging about $14.
